irish whiskey cocktails for st. Patrick’s day
I love Irish whiskey, and that's not just because I'm 65% Irish! It's a beautiful spirit that makes an excellent base for cocktails. For this special St. Patrick's Day class, we'll be making 1. a Collins that's sort of an Irish Manhattan lengthened with tonic, 2. a New York Sour riff with honey and lemon plus a port float, and 3. a chilled Irish Coffee that you'll want to drink all spring long.

THE IRISH ROSE 2.0 is based on a sweetened highball from Tom Bullock’s The Ideal Bartender (1917). His calls for Irish whiskey, grenadine and soda; I replace the sweetness and tart red fruit notes of the grenadine with ruby port and a touch of honey syrup, and top it all off with tonic and an orange twist.
I learned the art of the IRISH COFFEE at Fort Defiance, which serves what the New York Times called “the best in the known world.” This version is chilled and laced with honey syrup, making it perfect for spring. Garnished with freshly-grated cinnamon and orange zest.
The DUBLIN SOUR is an Irish-whiskey take on the ever-impressive New York Sour. Lemon and honey syrup provide a counterpoint to the red fruit and tannins of the ruby port float.
