WINTER SEASONAL CLASS
Let’s go back to the heyday of the American Cocktail with this class focusing on prewar twentieth-century drinks. We’ll make a French 75 (with jam!), a wintry Margarita, and a variation on the Seelbach cocktail. The Seelbach is a great drink that masqueraded as a genuinely old cocktail (circa 1900) but was recently discovered to be a creation of the 1990s... Still, as I said, it’s a hell of a drink. (Plus, there are actually old cocktails that have a similar structure!) We’ll embrace winter flavors (citrus! spices!) while studying the structure of these classic templates.

THIS SPARKLING COCKTAIL IS BASED ON A SEELBACH, WHICH ORIGINATED IN KENTUCKY AROUND 1900. THE ORIGINAL FEATURES BOURBON, LOTS OF BITTERS, ORANGE LIQUEUR AND CHAMPAGNE; OURS STAYS CLOSE TO THE ORIGINAL, WITH THE OPTION TO USE COGNAC IF YOU WANT TO MAKE IT MORE LOUISIANA THAN LOUISVILLE. I LOVE THIS COCKTAIL BECAUSE THE BASE IS STIRRED AND STRONG, BUT THE BUBBLES GIVE IT A SPECIAL LEVITY.
THE MARGARITA IS A CLASSIC THAT PREDATES WWII AND ROSE TO PREEMINENCE IN THE LATER 20TH CENTURY. THIS IS OUR WINTRY VERSION. LOOKS LIKE A MARGARITA, SURE, BUT IT SKIPS THE LIME IN FAVOR OF GRAPEFRUIT AND LEMON, WITH CINNAMON SYRUP IN ADDITION TO THE ORANGE LIQUEUR STANDARD IN MANY MARGARITAS. ALSO, IF YOU ‘RE A GIN PERSON, YOU CAN OPT TO MAKE THIS ONE WITH JUNIPER INSTEAD OF AGAVE; IT’S GREAT BOTH WAYS!
